Preparation
- Preheat your oven to 350°F (175°C). Line an 8x8-inch (20×20 cm) pan with parchment paper for easy removal.
- In a large mixing bowl, combine the sugar and eggs. Use a hand or stand mixer to beat them together for 3-5 minutes until the mixture is light and fluffy.
- Add the almond flour, cocoa powder, vanilla extract, and salt to the bowl. Gently stir until everything is just combined; be careful not to over-mix!
- In a small bowl, combine the olive oil and 1 cup of chocolate chips. Microwave in 30-second intervals, stirring in between, until fully melted.
- Pour the melted chocolate chip mixture into your brownie batter and stir to combine. Then, fold in the remaining chocolate chips for an extra chocolatey taste.
- Pour the brownie batter into your prepared pan and spread it evenly. Bake for 30-35 minutes, or until the center is just barely set.
- Once baked, remove the brownies from the oven and let them cool completely in the pan before slicing into squares.
Notes
These brownies can be served warm with vanilla ice cream, drizzled with chocolate sauce, or topped with sea salt. Store leftovers in an airtight container at room temperature for up to 3 days or in the fridge for a week. You can mix in nuts, dried fruit, or a swirl of peanut butter for customization. Check for doneness with a toothpick inserted into the brownies; it should come out with a few moist crumbs.
