  • 2-3 medium medium zucchinis (about 300-450 grams)
  • 2 large large eggs
  • 1 cup panko breadcrumbs (approximately 100 grams)
  • 1 cup finely shredded cheddar cheese (about 100 grams)
  • 2 tsp Italian seasoning (10 grams)
  • 1/2 tsp onion powder (1.5 grams)
  • 1/4 tsp garlic powder (0.5 grams)
  • Kosher salt and black pepper to taste
  • Cooking spray

Method
 

Preparation
  1. Shred the zucchinis using the largest holes of a box grater. Transfer the shredded zucchini to a clean tea towel.
  2. Squeeze out as much moisture as possible from the zucchini until you have about 2 packed cups of shredded zucchini.
  3. In a large bowl, beat the eggs. Then, add the shredded zucchini, panko breadcrumbs, cheddar cheese, Italian seasoning, onion powder, garlic powder, and season with kosher salt and black pepper. Mix until combined.
  4. Scoop out 1 tablespoon of the zucchini mixture and shape it into small tots, approximately 1.5-2 inches long. Place the shaped tots on a parchment-lined air fryer tray.
Cooking
  1. Spray the tops of the tots lightly with cooking spray. Preheat the air fryer to 400°F (200°C) and air fry the tots for 15 minutes or until they are golden brown.
Serving
  1. Remove the zucchini tots from the air fryer and serve with your favorite dipping sauce, like ketchup.

Notes

These tots can be served as a delightful appetizer or a side dish. They pair especially well with ranch dressing, marinara sauce, or a zesty yogurt dip. You can also substitute cheddar cheese with mozzarella, pepper jack, or any cheese you prefer. Prepare the mixture and shape the tots in advance, storing them in the fridge for up to 24 hours before air frying. Regular breadcrumbs can replace panko, but they won’t be as crispy.
