  • 1 1/2 quarts fresh strawberries, stems removed and halved (1.4 kg)
  • 3/4 cup granulated sugar (150 g)

  • 3 tablespoons cornstarch (24 g)

Directions:

  1. Preheat the oven and bake the refrigerated pie crust according to package directions. Allow it to cool completely once done.

  2. In a small bowl, use a fork to mash 1 1/2 cups of strawberries. Set aside.

  3. In a medium saucepan over medium heat, combine the mashed strawberries with the sugar, vanilla, and 1/4 cup of water (60 ml). Bring the mixture to a low boil, stirring and mashing frequently, and cook until the strawberries begin to soften and break down, about 5 minutes.

  4. In a separate small bowl, whisk together the cornstarch and 1/2 cup of water (120 ml). Stir this cornstarch mixture into the simmering strawberry mixture. Return it to a boil over medium-high heat.

  5. Reduce the heat to medium-low and simmer the mixture until it thickens, about 3 minutes, stirring frequently.

  6. Remove the saucepan from the heat and fold in the remaining fresh strawberries, mixing gently.

  7. Immediately pour the strawberry mixture into the cooled pie crust. Let it cool slightly for about 15 minutes, then place it in the refrigerator to chill completely, approximately 4 hours.
