Baked Zucchini Pasta

Ingredients:

1 zucchini, (about 200 g)
4 eggs,
300 g hard cheese, (about 10.5 oz)
1 red pepper, (about 150 g)
300 g pasta, (about 10.5 oz)
200 ml Gran Cucina, (about ¾ cup)
1 tablespoon oil,
salt to taste

Directions:

Cook the pasta in salted water for 6-9 minutes. While the pasta is cooking, wash the zucchini, cut it in half, remove the core, and grate it on a coarse grater. Coarsely grate the hard cheese and cut the washed red pepper into strips. Drain the cooked pasta and mix it with the grated zucchini, oil, and 3/4 of the grated cheese. Season the mixture with pepper and pour it into a baking dish.

Place the baking dish in a preheated oven at 180°C (350°F) and bake for 20 minutes. While baking, beat the eggs and mix them with Gran Cucina. After 20 minutes, pour the egg mixture over the pasta, sprinkle with the remaining cheese and paprika, and put the pasta in the oven to bake for another 20 minutes at 200°C (400°F). Serve the baked zucchini pasta warm, but it also tastes great cold. You can garnish each portion with a little parsley and serve it with lettuce leaves and tomatoes.
