Ingredients:

1 large chicken breast (about 8 oz or 225 g)
2 carrots (about 200 g)
1 medium can of chickpeas (about 400 g)
150 gr of fresh spinach (about 5 oz)
1 long green chili pepper
1 clove of garlic
50 gr of tomato paste (about 3.5 tbsp)
2 tsp of cumin powder
2 tsp of ras-el-hanout
2 pili-pili peppers (or substitute with cayenne for heat)
1 and a half liters of chicken broth (about 6 cups)
Olive oil
2 tsp of brown sugar
100 gr of feta cheese (optional, about 3.5 oz)

Directions:

First, heat the water in a saucepan with the chicken broth cubes. Turn off the heat when boiling. Next, peel the carrots and cut them into thin slices. Peel the clove of garlic and remove the germ. Cut the chili pepper in half, remove the seeds, and cut it into very small pieces. Drain the chickpeas.

Now, heat a little olive oil in a pot over medium heat. Add the chickpeas, tomato paste, green chili pepper, brown sugar, cumin, and ras-el-hanout. Press the clove of garlic and mix well for 2 minutes. Using a fork, crush half of the chickpeas in the pot.

Pour in the chicken broth and add the 2 pili-pili peppers, along with the carrots. Place the chicken breast in the broth. Bring to a boil, then reduce heat and simmer for about 30 minutes, covered.

After 30 minutes, remove the chicken breast and the 2 pili-pili peppers, and let the soup simmer. Shred the chicken using two forks and return the chicken pieces to the pot. Add the spinach leaves. Mix well and cook for 5 minutes uncovered to thicken the soup a little. Adjust the seasoning with salt, adding chili pepper to taste.
