Ingredients
- Vegetable stock: 1 litre (4 cups)
- Leeks: 2 medium
- Onions: 2 medium
- Potatoes: 300 g (about 10.5 oz)
- Cream: 150 ml (2/3 cup)
- Butter: 30 g (2 tablespoons)
- Olive oil: 1 tablespoon (optional)
- Fresh thyme: 1 small bunch
- Bread: for garnish

Instructions
- Peel and thinly slice the onions.
- In a large pot, heat the butter with the olive oil over medium heat. Add the onions and cook gently for about 15 minutes, stirring occasionally, until soft and lightly golden.
- Clean and thinly slice the leeks. Add them to the pot and cook together with the onions for another 10 minutes until tender.
- Peel and dice the potatoes into small cubes. Add them to the pot.
- Pour in the vegetable stock and add a sprig of fresh thyme. Cover with a lid and simmer gently for about 30 minutes, until the potatoes are very soft.
- Remove the thyme sprig. Blend the soup until smooth using a hand blender or countertop blender.
- Stir in the cream and heat gently without boiling. Season with salt and black pepper to taste.
- For the garnish, slice the bread, drizzle lightly with olive oil, season with salt and pepper, and fry in a pan until golden and crispy.
