Ingredients:

  • 1/2 cup finely diced onion (about 75g)
  • 1 cup THM Baking Blend (about 120g)
  • 2 teaspoons baking powder (about 10g)
  • 4 eggs (beaten)
  • 1/2 cup melted butter (about 115g)
  • 1 cup shredded cheddar cheese (reserve 2 tablespoons for garnishing) (about 100g)
  • 1/2 teaspoon black pepper (about 2g)
  • 3/4 teaspoon salt (about 4g)
  • Parsley for garnishing

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Prepare a 9-inch deep pie plate or a 10-inch quiche pan by spraying it lightly with Pam butter spray. Set aside.

  2. In a large bowl, combine the grated zucchini and onion. Add the baking blend and baking powder.

  3. Beat the eggs well in a separate bowl. Add the eggs, melted butter, 7/8 cup of cheese, black pepper, and salt to the zucchini mixture. Stir well to combine.

  4. Pour the mixture into the prepared pan and sprinkle with the reserved cheese and parsley.

  5. Place the quiche in the oven and bake for 35-40 minutes or until browned on top.
