  • 1 cup Dates (approximately 200g) Pitted dates for blending
  • 1 cup hot milk (approximately 240ml) Use plant-based milk for a vegan option
  • 1 cup wheat flour (approximately 120g) Can use alternative flours for gluten-free
  • 1/2 cup neutral oil (approximately 120ml) Coconut oil or melted butter can be used
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla essence

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a blender, combine the dates with the hot milk. Blend until the mixture is smooth and creamy.
  3. In a large mixing bowl, mix together the wheat flour, baking powder, and baking soda.
  4. Pour the date mixture and the neutral oil into the dry ingredients. Stir until everything is well combined.
  5. Add the vanilla essence and mix until it's fully incorporated.
  6. Pour the batter into a greased cake pan, spreading it evenly.
  7. Bake in the preheated oven for 25-30 minutes. To check for doneness, insert a toothpick into the center; it should come out clean.
  8. Once baked, allow the cake to cool in the pan before transferring it to a wire rack or serving plate.

Notes

The cake can be served with powdered sugar, enjoyed with tea or coffee, or paired with ice cream or yogurt. For added texture, consider mixing in nuts or spices.
