Ingredients
  

Base Ingredients
  • 1 cup butter Unsalted butter preferred
  • 1/2 cup brown sugar, packed Light or dark brown sugar works
  • 1 teaspoon vanilla extract Pure vanilla extract recommended
  • 3 cups rolled oats Old-fashioned rolled oats recommended
Filling Ingredients
  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter Can substitute with almond or cashew butter

Method
 

Preparation
  1. Line an 8-inch or 9-inch square baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a large saucepan, melt the butter and brown sugar over medium heat, stirring continuously until fully dissolved.
  3. Remove from heat, add vanilla extract, and mix in rolled oats until well combined.
  4. Return to low heat and cook the oat mixture for 3 to 4 minutes, stirring until blended.
  5. Pour half of the oat mixture into the prepared baking dish and press down evenly.
Creating the Filling
  1. In a small microwave-safe bowl, melt peanut butter and chocolate chips together in short bursts of 20-30 seconds, stirring in between until smooth.
  2. Pour the melted chocolate mixture over the base in the baking dish, reserving 1/4 cup for drizzling later.
  3. Spread the chocolate evenly over the crust.
Final Assembly
  1. Layer the remaining oat mixture over the chocolate filling, pressing down gently.
  2. Drizzle reserved chocolate mixture on top for decoration.
  3. Refrigerate for 2 to 3 hours, or overnight, until set.

Notes

The texture of the bars depends on cooking the butter and sugar mixture correctly. You can add nuts or dried fruit for additional flavor.
