Preparation
- Line an 8-inch or 9-inch square baking dish with parchment paper, leaving some overhang for easy removal.
- In a large saucepan, melt the butter and brown sugar over medium heat, stirring continuously until fully dissolved.
- Remove from heat, add vanilla extract, and mix in rolled oats until well combined.
- Return to low heat and cook the oat mixture for 3 to 4 minutes, stirring until blended.
- Pour half of the oat mixture into the prepared baking dish and press down evenly.
Creating the Filling
- In a small microwave-safe bowl, melt peanut butter and chocolate chips together in short bursts of 20-30 seconds, stirring in between until smooth.
- Pour the melted chocolate mixture over the base in the baking dish, reserving 1/4 cup for drizzling later.
- Spread the chocolate evenly over the crust.
Final Assembly
- Layer the remaining oat mixture over the chocolate filling, pressing down gently.
- Drizzle reserved chocolate mixture on top for decoration.
- Refrigerate for 2 to 3 hours, or overnight, until set.
Notes
The texture of the bars depends on cooking the butter and sugar mixture correctly. You can add nuts or dried fruit for additional flavor.
