Ingredients
  

For the crust
  • 1.5 cups 1 1/2 cups graham cracker crumbs (150g)
  • 0.5 cup 1/2 cup unsalted butter, melted (115g)
  • 0.25 cup 1/4 cup granulated sugar (50g)
For the cheesecake filling
  • 16 oz 16 oz cream cheese, softened (450g)
  • 1 cup 1 cup granulated sugar (200g)
  • 3 large 3 large eggs
  • 1 tsp 1 tsp vanilla extract
  • 2 cups 2 cups apples, peeled and chopped (about 2 medium apples)
  • 1 cup 1 cup caramel sauce (homemade or store-bought)
  • 1 tsp 1 tsp cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Press this mixture firmly into the bottom of the prepared baking dish.
  3. In a large mixing bowl, beat the cream cheese until smooth. Add in the sugar, eggs, and vanilla extract, mixing until well combined.
  4. Gently fold in the chopped apples and cinnamon into the cream cheese mixture until evenly distributed.
Assembly and Baking
  1. Pour the cheesecake filling over the crust, spreading it evenly.
  2. Drizzle the caramel sauce generously over the cheesecake batter.
  3. Bake for 30-35 minutes, or until the center is set and the edges are golden brown.
  4. Let the bars cool down to room temperature, then refrigerate for at least 2 hours before slicing.

Notes

For serving, cut into squares or rectangles, and consider sprinkling extra cinnamon on top. Serve with vanilla ice cream or whipped cream for a delightful treat.
