Ingredients
  

For the Jam
  • 4 cups fresh apples, peeled and chopped (about 4-5 medium apples)
  • 1 cup sugar (200 grams)
  • 1/4 cup lemon juice (60 ml)
  • 2 tablespoons fresh thyme leaves
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 teaspoon salt

Preparation
  1. In a large pot, combine the chopped apples, sugar, lemon juice, thyme, cinnamon (if using), and salt. Stir everything together well.
Cooking
  1. Cook the mixture over medium heat, stirring frequently for about 10-15 minutes until the apples become soft and start to release their juices.
  2. Once the mixture is bubbling, bring it to a gentle boil. Reduce the heat and let it simmer for about 30-40 minutes, stirring occasionally until it thickens nicely.
Cooling and Storing
  1. Remove the pot from the heat and let the jam cool slightly for a few minutes.
  2. Pour the warm jam into sterilized jars and seal them tightly.
  3. Allow your jam to cool completely at room temperature before storing it in the refrigerator.

Notes

Use a mix of sweet and tart apples, like Granny Smith and Honeycrisp, for flavor depth. For a thicker jam, simmer for an additional 10-15 minutes.
