Tex Mex Zucchini Casserole

Ingredients:

  • 2 medium zucchini, cut into half moons (approximately 300 g)
  • 150 g cherry tomatoes, halved

  • 120 g black beans, rinsed and drained
  • 1 small onion (approximately 70 g), chopped
  • 1 garlic clove, finely chopped
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika powder
  • Salt and black pepper to taste
  • 4 large eggs
  • 120 ml milk
  • 100 g grated Cheddar cheese
  • 50-60 g grated Pepper Jack or Monterey Jack
  • 2 tbsp freshly chopped coriander or parsley (optional)

Directions:

  1. Preheat oven to 190C (top-bottom heat) and lightly grease a 23×23 cm baking dish.
  2. Heat olive oil in a pan over medium heat and sauté the onion and garlic for about 3 minutes until softened.
  3. Stir in the zucchini, corn, black beans, cumin, chili powder, smoked paprika, salt, and pepper. Cook for about 5-6 minutes until the zucchini is tender but still firm to the bite. Remove from heat.
  4. In a bowl, whisk together the eggs and milk, then stir in half of the grated cheese.
  5. Spread the vegetable mixture evenly in the baking dish and sprinkle with cherry tomatoes.
  6. Pour the egg mixture over the vegetables and sprinkle with the remaining cheese.
  7. Bake uncovered for about 25-30 minutes until the center is set and the surface is golden brown and slightly bubbling.
  8. Let cool for 5-10 minutes before cutting into pieces. Garnish with cilantro or parsley if desired.
