Ingredients

  • 1 teaspoon dried basil
  • All-purpose flour for dusting
  • Vegetable oil for frying

Instructions

  1. Prepare the chicken: Place chicken breasts between plastic wrap and gently pound to even thickness (about 1/2 inch). Alternatively, carefully butterfly each breast by cutting horizontally through the middle, leaving one edge connected so it opens like a book.
  2. Season the meat: Season both sides of the flattened chicken with salt, black pepper, and dried basil.
  3. Add the filling: Place mozzarella slices and chopped sun-dried tomatoes on one half of each chicken breast, leaving a border around the edges.
  4. Roll and secure: Carefully roll the chicken breast tightly around the filling, starting from the filled side. Secure with toothpicks if needed to prevent unrolling during cooking.
  5. Coat with flour: Lightly dust the rolled chicken breasts with flour on all sides. This helps create a golden crust and seals in the juices.
  6. Heat the oil: Heat vegetable oil in a large skillet over medium-high heat until shimmering.
  7. Cook the chicken: Carefully place the stuffed chicken rolls in the hot oil. Fry for 3-4 minutes on each side (turning to cook all sides) until golden brown and crispy all around.
  8. Check doneness: Ensure internal temperature reaches 74°C (165°F) before serving. If needed, reduce heat and cook a bit longer.
  9. Rest and slice: Let the chicken rest for 2-3 minutes before removing toothpicks and slicing to reveal the beautiful stuffed interior.
