It’s perfect for any occasion, especially during the warmer months!

Ingredients:

  • 600 g strawberries (or thawed frozen strawberries) (about 21 oz)
  • 60 g sugar (about 1/4 cup)
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 500 g mascarpone cheese (about 1 3/4 cups)
  • 250 g low-fat quark (about 9 oz, or substitute with Greek yogurt)
  • 120 g sugar (about 1/2 cup)
  • 2 packets vanilla sugar (or 2 teaspoons vanilla extract)
  • 200 g heavy cream (about 3/4 cup)
  • 1 packet cream stabilizer (optional)
  • 200 g ladyfingers (about 7 oz)
  • 50 g white chocolate (about 1.8 oz)

Directions:

  1. Prepare the Strawberry Sauce: Wash and clean the strawberries, then cut them into coarse pieces. In a pot, combine strawberries, sugar, lemon juice, and 2-3 tablespoons of water. Bring to a boil and simmer for 1-2 minutes. Puree the mixture with an immersion blender until smooth.
  2. Make the Cream: In a mixing bowl, combine the mascarpone cheese, low-fat quark, sugar, and vanilla sugar. Use a whisk to mix everything until smooth. In a separate bowl, whip the heavy cream with the cream stabilizer until stiff peaks form, then gently fold it into the mascarpone mixture.
  3. Layer the Tiramisu: Take a baking dish (approximately 12 x 6 inches) and lay down a layer of ladyfingers. Generously drizzle with warm strawberry sauce and then spread half of the cream mixture over it.
  4. Add More Layers: Repeat with the remaining ladyfingers, drizzling again with strawberry sauce (save some sauce for later) and applying a thin layer of cream on top. Fill the remaining cream into a potato ricer or piping bag and pipe it over the dessert to resemble spaghetti. Cover the tiramisu and refrigerate for at least 2 hours to set.
  5. Garnish and Serve: While waiting, chop the white chocolate. Just before serving, generously drizzle the remaining strawberry sauce over the tiramisu and sprinkle with chopped white chocolate. Serve with any leftover strawberry sauce and chocolate pieces on the side.
