Preserved Lemons: A Flavorful Citrus Addition
Preserved lemons are a delightful way to add a burst of tangy flavor to your dishes. Made from whole lemons packed with salt, this technique brings out the unique characteristics of the fruit while enhancing your culinary creations. Ideal for garnishing or adding zest to various recipes, preserved lemons are easy to make at home and last for months in the refrigerator.
Ingredients:
- 6-8 whole lemons (about 1.5-2 kg)
- 4-5 tablespoons salt (60-75 grams), plus 1 additional tablespoon for topping
- Additional fresh lemon juice (if needed)
- Quart jar (approximately 1 liter)
- Sharp knife
- Pestle or wooden spoon
Directions:
Start by cleaning your quart jar thoroughly with hot soapy water and drying it completely. Rinse the outsides of the lemons under water and pat them dry with a towel. Trim the ends off each lemon to create flat surfaces. Place a lemon on one of the flat ends and carefully cut an ‘x’ about 1/2 inch (1.25 cm) deep without cutting all the way through the lemon. Gently open the lemon and fill the cut with 1/2 tablespoon of salt.
Pack the lemons tightly into the jar, using a pestle or a wooden spoon to ensure they fit snugly. Once all the lemons are packed, sprinkle an additional 1 tablespoon of salt on top. Press down on the lemons to help release their juice; if needed, add fresh lemon juice to ensure the lemons are completely submerged in liquid.
Alternatively, you can quarter the lemons instead of making an ‘x’, layering salt as you pack them in the jar for a slightly different texture. Seal the jar and store it in a cool, dry place for at least one week, shaking it occasionally to mix the contents. After a week, transfer the jar to the refrigerator. Your preserved lemons are ready to use when the peels turn translucent.
To use, simply remove a lemon, rinse off the excess salt, and chop the peel as needed. Preserved lemons will keep in the fridge for up to 6 months, allowing you to enjoy their flavor for a long time.
