Ingredients:

  • 8 pieces potato rolls (approximately 500 g)
  • 4 pieces eggs
  • Milk as needed (approximately 120 ml)
  • Butter as needed
  • 6 pieces apples (approximately 600 g)
  • 500 g soft cottage cheese
  • Sugar to taste
  • 2 pieces eggs (for yolk)
  • Ground cinnamon to taste
  • Raisins to taste (approximately 50 g)
  • Chopped nuts to taste (approximately 50 g)

Directions:

First prepare the filling. Peel the apples, remove the cores, and either cut them into smaller pieces or grate them on a coarse grater. Crack the eggs into the curd and separate the yolks and whites. Place the yolks in a bowl with the curd, sugar, and milk, and mix until smooth. Beat the egg whites until stiff peaks form and then gently fold them into the curd mixture.

Next, crack the eggs into a bowl again and separate the yolks and whites. Beat the yolks with a little milk. Grease a baking mold with butter. Cut the potato rolls into slices and soak them in the milk and beaten egg yolks. Arrange about half of the soaked rolls on the bottom of the greased mold.

Layer the apples on top of the soaked potato rolls. Sprinkle with sugar, ground cinnamon, chopped nuts, and raisins. Spread the cottage cheese filling over the apple layer. Then, take the remaining soaked rolls and place them on top of the cottage cheese filling. Pour the rest of the milk into the mold, making sure to cover everything well. Place small pieces of butter on top for added richness.

Beat the egg whites again until stiff and spread them carefully over the top of the cake. Place the pan in a preheated oven at 180°C (350°F) and bake until the top is golden brown and the cake is set, which usually takes about 30-40 minutes. Serve the potato cake while it is still hot, and sprinkle a little powdered sugar on top for a sweet finish.
