Ingredients
- 2 cups (180 g) rolled oats
- 2 ripe bananas, mashed
- 1 1/2 cups (225 g) diced fresh or thawed frozen peaches
- 2 large eggs
- 1 cup (240 ml) milk (any kind)
- 1/4 cup (60 ml) maple syrup
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/3 cup (50 g) chopped pecans, optional
Instructions
- Preheat the oven to 350°F (175°C). Line an 8-inch square pan with parchment paper to prevent sticking.
- In a large bowl, whisk together the mashed bananas, eggs, milk, maple syrup, and vanilla extract until well combined.
- Stir in the rolled oats, baking powder, ground cinnamon, and salt until mixed. Gently fold in 1 cup (150 g) of the diced peaches.
- Pour the mixture into the prepared pan, spreading it evenly. Top with the remaining peaches and sprinkle with chopped pecans if you’re using them.
- Bake in the preheated oven for 35 to 40 minutes, or until the center is set and the edges are lightly golden. You can check for doneness by inserting a toothpick in the center; it should come out clean.
- Allow the baked oatmeal to cool for at least 15 minutes before cutting it into squares.
Recipe Notes
- Ripe Bananas: Make sure your bananas are very ripe for maximum sweetness and easy mashing.
- Frozen Peaches: If using frozen peaches, thaw and drain them well to avoid excess moisture.
- Milk Options: You can use non-dairy milk like almond or oat milk to suit dietary needs.
- Storage: Cut squares can be stored in an airtight container for up to 5 days in the fridge.
- Texture: Letting it cool longer helps it firm up, making it easier to cut into neat squares.
