Oatmeal Cocoa Banana Bake

Oatmeal Cocoa Banana Bake served in a bowl, topped with sliced bananas and cocoa powder.

Ingredients

  • 1 ½ cups (120 g) oat flakes
  • ⅔ cup (150 ml) warm milk
  • 2 ripe bananas, mashed
  • 2 large eggs
  • 4 tablespoons (45 g) cocoa powder
  • 1 tablespoon (12 g) baking powder
  • ⅓ cup (40 g) peanuts, chopped
  • 2 tablespoons (20 g) pumpkin seeds

Instructions

  1. Preheat your oven to 350°F (180°C). Greasing your baking dish lightly will prevent sticking.
  2. In a mixing bowl, combine the oat flakes with warm milk and let it sit for about 5 minutes to soften.
  3. Beat the eggs in a separate bowl, then add in the mashed bananas, cocoa powder, and baking powder. Mix until well combined.
  4. Fold the wet mixture into the oat flakes and milk, ensuring everything is evenly mixed. Add the chopped peanuts and pumpkin seeds, then stir again.
  5. Pour the mixture into your prepared baking dish, smoothing the top for even baking.
  6. Bake in the preheated oven for 30-40 minutes, until the edges are set and the top has a slight crust.
  7. Allow it to cool for 5-10 minutes before slicing and serving.

Recipe Notes

  • If you want a fudgier texture, try reducing the baking time slightly.
  • You can add a pinch of salt to enhance the chocolate flavor.
  • For a fun twist, consider adding a handful of chocolate chips for extra sweetness.
