Ingredients

For the Orange Cream Roll:

  • 2 medium oranges (300ml / 1¼ cups fresh juice)
  • 2 ripe bananas (240g / 8.5 oz), mashed
  • 500ml / 2 cups whole milk
  • 150g / 1 cup / 5.3 oz cornstarch
  • 100g / ⅓ cup / 3.5 oz condensed milk
  • 20g / 1½ tablespoons butter
  • Yellow food coloring (optional)
  • 100g / 1 cup desiccated coconut flakes for coating

For the Banana Caramel:

  • 3 ripe bananas (360g / 12.7 oz), sliced
  • 150g / ¾ cup sugar
  • 50ml / 3 tablespoons water

Instructions

Step 1: Extract the Orange Juice Cut the 2 oranges in half and squeeze to extract 300ml of fresh orange juice. Strain to remove any pulp or seeds, then set aside.

Step 2: Mash the Bananas Peel and mash the 2 bananas in a small bowl until smooth with minimal lumps. Set aside.

Step 3: Prepare the Cream Base In a large saucepan, combine 500ml milk and 150g cornstarch. Whisk vigorously until the cornstarch is completely dissolved with no lumps remaining.

Step 4: Add the Flavor Components Add the orange juice, mashed bananas, and condensed milk to the milk mixture. If using food coloring, add 2-3 drops of yellow coloring for a more vibrant appearance. Whisk everything together until well combined.

Step 5: Cook the Cream Place the saucepan over medium heat and cook, stirring constantly with a wooden spoon or whisk. Continue stirring for 8-10 minutes until the mixture thickens to a pudding-like consistency that coats the back of a spoon.

Step 6: Finish with Butter Remove from heat and immediately stir in 20g butter until fully melted and incorporated. This adds richness and shine to your cream.

Step 7: Set the Cream Transfer the hot cream mixture into a rectangular dish or tray lined with plastic wrap, leaving extra wrap hanging over the sides. Smooth the top with a spatula. Cover the surface directly with plastic wrap to prevent a skin from forming.

Step 8: Chill Refrigerate for 3-4 hours or until completely set and firm to the touch.

Step 9: Make the Banana Caramel In a heavy-bottomed pan, combine 150g sugar and 50ml water. Cook over medium heat without stirring until the sugar dissolves and turns golden amber (about 5-7 minutes). Add the sliced bananas and gently stir to coat. Cook for 2-3 minutes until bananas are caramelized. Remove from heat and let cool.

Step 10: Coat with Coconut Once the cream is fully set, use the plastic wrap to lift it out of the dish. Spread the desiccated coconut on a large plate or tray. Gently roll the cream log in the coconut, pressing lightly so the flakes adhere to all sides.

Step 11: Slice and Serve Using a sharp knife dipped in hot water, slice the roll into rounds. Serve with the banana caramel on top or on the side.
