Ingredients

  • 2 cups (180 g) rolled oats
  • 2 ripe pears, grated (about 1 cup/150 g)
  • 2 tablespoons (20 g) chia seeds
  • 2 large eggs
  • 1 ½ cups (360 ml) milk (dairy or plant-based)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 10-cup muffin tin with oil or butter.

  2. Grate the pears finely, including the peel, for added texture and nutrients.

  3. In a large bowl, combine the rolled oats, grated pears, chia seeds, cinnamon, and baking powder.

  4. In a separate bowl, beat the eggs with the milk and vanilla extract.

  5. Pour the wet ingredients into the dry mixture and stir well to combine everything evenly. The batter will look thick and somewhat sticky.

  6. Let the mixture rest for 5 minutes. This allows the chia seeds and oats to absorb some liquid, resulting in softer, better-set oat cups after baking.

  7. Spoon the batter evenly into the greased muffin cups, filling each about three-quarters full.

  8. Bake for 22 to 25 minutes. They should be lightly golden on top and a toothpick inserted in the center will come out mostly clean (a little moisture is fine).

  9. Allow the oat cups to cool in the tin for about 10 minutes before gently removing them to a wire rack to cool completely.

Recipe Notes

  • Grate pears finely to avoid large chunks that can make the oat cups too wet or unevenly textured.
  • Don’t skip the 5-minute rest before baking—this step makes a noticeable difference in softness.
  • If the pear is extra juicy, gently squeeze some of the excess juice out before grating to avoid soggy cups.
  • Use a non-stick muffin tin or grease well to prevent sticking.
  • Flavor variations work well (see below), but keep wet ingredient quantities consistent to maintain texture.
