Ingredients

  • 375 ml water (1.6 cups)
  • 750 ml hot water (3.2 cups)
  • 225 g fine bulgur (1.1 cups)

  • 1 tablespoon paprika paste
  • 1 tablespoon tomato paste
  • 5 spring onions, chopped
  • 1/2 bunch parsley, chopped
  • 1.5 teaspoons salt
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon black pepper

Directions

  1. Wash 375 ml (1.6 cups) of red lentils in plenty of water and then cook them in 750 ml (3.2 cups) of hot water.
  2. Once the water is almost absorbed, remove the lentils from heat and stir in 225 g (1.1 cups) of fine bulgur.
  3. Cover the pot and let the mixture sit for about 15 minutes to swell.
  4. Heat 250 ml (1 cup) of olive oil in a frying pan.
  5. Chop 2 onions into small dice and add them to the pan. Sauté the chopped onions for about 5 minutes until they are soft.
  6. Gradually add 1 tbsp of paprika paste, 1 tbsp of tomato paste, 1.5 tsp of salt, 1 tsp of chili powder, and 1 tsp of cumin to the pan. Sauté the onion mixture for an additional 3-4 minutes.
  7. Combine the tomato paste and the onion mixture with the swollen bulgur and lentil mixture.
  8. Finely chop 5 spring onions and 1/2 bunch of parsley and add the chopped herbs to the mixture.
  9. Begin to knead the ingredients together until everything is well mixed.
  10. Take walnut-sized pieces from the prepared mixture and form them into meatballs.
  11. Arrange the lentil meatballs on a serving platter and serve them with fresh herbs.
