Ingredients

- 750 ml hot water (3.2 cups)
- 225 g fine bulgur (1.1 cups)

- 1 tablespoon tomato paste
- 5 spring onions, chopped
- 1/2 bunch parsley, chopped
- 1.5 teaspoons salt
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon black pepper
Directions
- Wash 375 ml (1.6 cups) of red lentils in plenty of water and then cook them in 750 ml (3.2 cups) of hot water.
- Once the water is almost absorbed, remove the lentils from heat and stir in 225 g (1.1 cups) of fine bulgur.
- Cover the pot and let the mixture sit for about 15 minutes to swell.
- Heat 250 ml (1 cup) of olive oil in a frying pan.
- Chop 2 onions into small dice and add them to the pan. Sauté the chopped onions for about 5 minutes until they are soft.
- Gradually add 1 tbsp of paprika paste, 1 tbsp of tomato paste, 1.5 tsp of salt, 1 tsp of chili powder, and 1 tsp of cumin to the pan. Sauté the onion mixture for an additional 3-4 minutes.
- Combine the tomato paste and the onion mixture with the swollen bulgur and lentil mixture.
- Finely chop 5 spring onions and 1/2 bunch of parsley and add the chopped herbs to the mixture.
- Begin to knead the ingredients together until everything is well mixed.
- Take walnut-sized pieces from the prepared mixture and form them into meatballs.
- Arrange the lentil meatballs on a serving platter and serve them with fresh herbs.
