Ingredients

  • 2 ripe bananas, mashed (about 1 cup or 240 g)
  • 2 large eggs
  • 2 cups (180 g) rolled oats
  • 1 cup (240 ml) milk or unsweetened almond milk
  • 1/4 cup (25 g) unsweetened cocoa powder
  • 1/3 cup (40 g) chopped walnuts (or omit for nut-free)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your baking dish lightly to prevent sticking.
  2. In a mixing bowl, whisk together the mashed bananas, eggs, milk, and vanilla extract until smooth.
  3. Stir in the rolled oats, cocoa powder, baking powder, salt, and walnuts until well combined. The mixture should be thick but pourable.
  4. Pour the oat mixture into the greased baking dish and spread it evenly.
  5. Bake for 28 to 32 minutes. It’s done when the edges are set, but the center should still be slightly soft. Keep an eye on it to ensure it doesn’t overbake.
  6. Allow it to cool for a few minutes before slicing it into squares for serving.

Recipe Notes

  • For a richer flavor, toast the walnuts in a dry skillet for a few minutes before adding them to the batter.
  • If you prefer a sweeter oatmeal, consider adding a tablespoon of honey or maple syrup to the wet ingredients.
  • Avoid overmixing the batter to keep the final product light and fluffy.
  • You can use quick oats in a pinch, but rolled oats yield a better texture.
