Ingredients

  • 500g / 17.6 oz / 1 large head cauliflower, cut into florets
  • 5 large eggs
  • 4-5 tbsp mayonnaise
  • Salt to taste
  • Black pepper to taste
  • 100g / 3.5 oz cheese, grated (cheddar, mozzarella, or your preferred melting cheese)
  • 1 tbsp olive oil for greasing

Instructions

Preparing the Cauliflower

Step 1: Cut the cauliflower into medium-sized florets, removing the thick stems and leaves.

Step 2: Bring a large pot of salted water to a rolling boil over high heat.

Step 3: Add the cauliflower florets to the boiling water and cook for exactly 5 minutes after the water returns to a boil.

Step 4: Drain the cauliflower thoroughly in a colander and let cool for 2-3 minutes to remove excess moisture.

Making the Egg Mixture

Step 5: Preheat your oven to 180°C / 356°F.

Step 6: In a large mixing bowl, crack the eggs and beat them thoroughly until well combined.

Step 7: Add salt and black pepper to the beaten eggs, mixing until evenly distributed.

Step 8: Whisk in the mayonnaise until the mixture is smooth and creamy with no lumps.

Assembling and Baking

Step 9: Lightly grease a 20x25cm / 8×10-inch baking dish with olive oil.

Step 10: Arrange the drained cauliflower florets evenly in the prepared baking dish.

Step 11: Pour the egg and mayonnaise mixture over the cauliflower, ensuring all florets are well coated.

Step 12: Gently shake the dish to help the egg mixture settle between the cauliflower pieces.

Step 13: Sprinkle the grated cheese evenly over the top of the entire dish.

Step 14: Bake for 20-25 minutes until the eggs are set, the top is golden brown, and the cheese is bubbly and lightly browned.

Step 15: Remove from oven and let rest for 3-5 minutes before serving to allow the dish to set properly.
