Ingredients

For the Flat Oatmeal Bread in a Pan:

  • 200 g (2 cups) oats
  • 1 teaspoon baking powder
  • Salt to taste
  • 50 ml (3 tablespoons + 1 teaspoon) warm water
  • 50 ml (3 tablespoons + 1 teaspoon) milk
  • 2 tablespoons (30 ml) extra virgin olive oil

For the Garlic-Parsley Brush:

  • 1 teaspoon garlic powder
  • 1 tablespoon (15 ml) oil
  • Finely chopped parsley (about 1 tablespoon)
  • Salt to taste

For the Protein Casserole with Chicken and Vegetables:

  • 1 chicken breast (about 450 g / 1 lb)
  • 1 medium zucchini
  • 2 eggs
  • 150 g (2/3 cup) quark (or substitute with ricotta or thick Greek yogurt)
  • 2 tablespoons (30 g) sour cream
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • 120 g (1 cup) mozzarella, sliced or grated

Instructions

  1. In a large bowl, mix 200 g oats, 1 teaspoon baking powder, and salt until evenly combined.
  2. Gradually add 50 ml warm water and 50 ml milk, stirring continuously to form a soft dough. If it feels too sticky, sprinkle in a little more oats until manageable but still soft.
  3. Stir in 2 tablespoons olive oil and knead lightly in the bowl until the dough holds together well.
  4. Divide the dough into small balls, then flatten each ball into a disk about 1 cm thick.
  5. Heat a non-stick pan over medium heat. Place the flattened dough pieces in the pan and cook 3–4 minutes each side until golden and cooked through. Remove and keep warm.
  6. For the garlic mixture, stir 1 teaspoon garlic powder, 1 tablespoon oil, finely chopped parsley, and salt together. Brush this over the warm flatbreads to enhance flavor.
  7. Preheat your oven to 200 °C (400 °F).
  8. Cut the chicken breast and zucchini into small pieces or slices.
  9. In a bowl, beat the 2 eggs, then mix in 150 g quark, 2 tablespoons sour cream, 2 teaspoons garlic powder, and salt and pepper to taste.
  10. Add the chicken and zucchini pieces into the egg mixture and stir well to combine evenly.
  11. Pour the mixture into a baking dish and spread it flat. Sprinkle the mozzarella evenly on top.
  12. Bake for about 40 minutes until casserole is set, the chicken is cooked through, and the top is golden brown.

Recipe Notes

  • To ensure flatbread isn’t too dense, avoid adding too many extra oats; it should stay soft and pliable.
  • Use a good quality non-stick pan or cast iron skillet for even bread cooking and browning.
  • Let the casserole rest a few minutes after baking for easier portioning and better flavor meld.
  • Fresh herbs like parsley brighten the flatbread flavor, but you can vary with chives or oregano.
