Ingredients:
- 1 cup organic old fashioned rolled oats (90g)
- 1 cup organic quick oats (90g)
- ¼ cup dried fruit of choice, chopped (cranberries, dates, or dried apricots) (37g)
- ¼ cup raw pumpkin seeds (32g)
- ¼ cup raw sunflower seeds (36g)
- ½ tsp sea salt (3g)
- ¼ cup melted ghee, grass-fed butter, or melted organic unrefined coconut oil (60ml)
- ¼ cup pure maple syrup or raw honey (60ml)
- 1 mashed ripe banana (about 100g)
- 2 large eggs, room temperature
- 2 tsps vanilla extract (10ml)
Directions:
- Preheat your oven to 350 degrees F (175 degrees C) and line a large sheet pan with parchment paper.
- In a large mixing bowl, combine the oats, dried fruit, pumpkin seeds, sunflower seeds, and sea salt.
- In a separate bowl, whisk together the melted ghee, maple syrup, mashed banana, eggs, and vanilla extract until well blended.
- Pour the wet mixture over the oat mixture and stir until everything is well combined and moist. Allow your mixture to sit for 5 minutes, then stir again.
- Take a bit less than ¼ cup of the mixture and drop it onto the prepared sheet pan.
