Egg and Broccoli Dish
Ingredients
- 14 oz (400 g) broccoli florets
- Salt and pepper to taste
- 5 large eggs
- 4 tablespoons (60 g) sour cream or yogurt
- 3.5 oz (100 g) Suluguni cheese, grated
Instructions
- Begin by washing and chopping the broccoli into bite-sized florets. Make sure they are uniform for even cooking.
- Heat a large non-stick skillet over medium heat and sauté the broccoli for about 5-6 minutes until slightly tender. Season with salt and pepper.
- In a mixing bowl, whisk together the eggs and sour cream until fully blended, achieving a smooth texture.
- Pour the egg mixture over the sautéed broccoli in the skillet. Allow it to cook undisturbed for about 2-3 minutes, so the eggs begin to set at the bottom.
- Grate the Suluguni cheese generously over the egg and broccoli mixture.
- Cover the skillet with a lid and let it cook for an additional 3-4 minutes, or until the eggs are cooked through and the cheese is melted.
- Once done, take it off the heat and let it sit for a minute before serving. This allows the flavors to deepen.
Recipe Notes
- For a little heat, consider adding crushed red pepper flakes to the broccoli while sautéing.
- If using frozen broccoli, simply thaw and drain it well before adding to the skillet to prevent excess moisture.
- Letting the dish rest after cooking enhances the flavors as they mingle.
