- 3 tablespoons olive oil (45 ml)
- 1 ¼ cups flour of choice (150 g)
- 1/3 cup grated parmesan cheese (30 g)
- 2 teaspoons baking powder (10 g)
- 1 teaspoon salt (5 g)
- 3 cups shredded zucchini (about 300 g)
- 1 cup shredded carrot (about 120 g)
- 3 scallions, (diced)
- 2 tablespoons fresh dill (about 10 g)
- 1 heaping cup shredded mozzarella cheese (about 100 g)

Preheat oven to 350°F (180°C). Line a 9×13 inch metal pan with parchment paper.
