Ingredients:

  • 2 eggs
  • 2 golden apples (about 300 grams)
  • 120 ml milk (about ½ cup)
  • 60 grams 00 flour (about ½ cup)
  • 40 grams granulated sugar (about 3 tablespoons)
  • 15 grams raisins (about 1 tablespoon)
  • 1 lemon
  • ½ teaspoon cinnamon powder
  • Powdered sugar, to taste
  • Butter, to taste

Directions:

  1. Peel the apples, remove the core, and cut them into wedges. Place the wedges in a bowl with the juice of half a lemon and the cinnamon powder. Mix well and let them sit for about 20 minutes to soak up the flavors.
  2. In a separate bowl, break the eggs and add the granulated sugar. Beat the mixture with an electric whisk for a few minutes until it becomes light and frothy.
  3. Add the grated zest of the remaining lemon and pour in the milk. Mix well.
  4. Sift in the flour and stir to combine.
  5. Soak the raisins in cold water for about ten minutes, then squeeze out the excess water. Add the raisins to the egg mixture and mix well.
  6. Gently fold in the apple slices.
  7. Melt a knob of butter in an 8-inch (20 cm) non-stick pan over low heat.
  8. Pour the apple mixture into the pan. Cover with a lid and cook for about 10 minutes on low flame.
  9. After 10 minutes, carefully turn the frittata over using a flat plate and cook for another 5 minutes.
  10. Transfer the frittata to a serving plate and sprinkle the top with powdered sugar.
