Ingredients
- 3 large eggs
- 1/2 cup (125 g) natural yogurt
- 1 medium potato, sliced and fried or baked
- 1/4 cup (40 g) green olives, pitted and chopped
- 2 oz (50 g) mortadella, diced
- 1 oz (30 g) mozzarella cheese, diced or shredded
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
- 1 tablespoon all-purpose flour
- 1 teaspoon baking powder (approximately 4 g)
Instructions
- Preheat your oven to 350°F (180°C).
- In a mixing bowl, whisk together the eggs and yogurt until smooth.
- Add the flour and baking powder to the egg mixture, stirring well to combine. It should be a thick but smooth batter.
- Gently fold in the sliced potato, chopped olives, diced mortadella, mozzarella cheese, parsley, salt, and pepper until everything is well coated and evenly distributed.
- Spoon the mixture into muffin molds, filling each about 3/4 full.
- Bake in the preheated oven for 15-20 minutes, or until the muffins are golden and a toothpick inserted into the center comes out clean.
- Let them cool slightly before serving. Enjoy these savory delights warm!
Recipe Notes
- Make sure to pat the fried or baked potato slices dry if they are greasy to avoid soggy muffins.
- You can play with the textures by adding different cheeses, like feta or cheddar, for a twist on flavor.
- If the mixture seems too thick, you can add a splash of milk or water to loosen it up a bit.
- An added sprinkle of cheese on top of the batter before baking gives a nice golden crust.
