Loaf of homemade Greek yogurt bread sliced on a wooden board

Recipe Summary

  • Prep Time: 15 minutes
  • Cook Time: 30 minutes
  • Total Time: 45 minutes
  • Servings: About 12 slices
  • Cuisine: Mediterranean
  • Course: Breakfast or Snack
  • Calories: ~180 per slice

Ingredients

  • 1 cup (90 g) rolled oats
  • 1/3 cup (50 g) cashews
  • 1/5 cup (30 g) peanuts
  • 2 tablespoons (30 g) sesame seeds
  • 1 teaspoon (5 g) baking powder
  • 1/5 cup (30 g) raisins
  • 1 large egg
  • Vanilla extract, to taste
  • 1/3 cup (80 g) Greek yogurt
  • 1.5 cups (360 g) cottage cheese or ricotta
  • 2 tablespoons (30 g) coconut oil, melted
  • Sweetener, to taste (honey, sugar, or substitute)
  • Pinch of salt

Instructions

  1. Preheat your oven to 360°F (180°C). Line a baking sheet with parchment paper.
  2. In a food processor, grind half of the rolled oats until they reach a flour-like consistency. This addition will improve the bread’s texture significantly.
  3. In a small pan, toast the cashews and peanuts over medium heat until they are fragrant and lightly golden, about 5 minutes. Be careful not to burn them. Once toasted, chop them coarsely.
  4. In a mixing bowl, combine the chopped nuts with the remaining rolled oats, sesame seeds, baking powder, and a pinch of salt.
  5. Meanwhile, prepare the raisins by covering them with cold water in a small bowl and letting them soak for about 15 minutes.
  6. In another bowl, mix the egg, a splash of vanilla extract to your taste, Greek yogurt, cottage cheese or ricotta, melted coconut oil, and sweetener until smooth.
  7. Combine the wet and dry ingredients gently, then fold in the soaked raisins (drained).
  8. Spoon the bread mixture onto the prepared baking sheet, shaping it into a loaf.
  9. Sprinkle additional sesame seeds on top for a nice finish and bake for about 30 minutes, or until the bread is golden and a toothpick inserted in the center comes out clean.

Recipe Notes

  • Allow your loaf to cool for a few minutes before slicing; this prevents it from crumbling.
  • Personalize the sweetener based on whether you want it more on the savory or sweet side.
  • If you like a little spice, consider adding a dash of cinnamon to the batter.
