Ingredients

  • 1 piece lavash bread (about 10×12 inches or 25×30 cm)
  • 2 large eggs
  • 40 g (1.4 oz) cheese, grated (feta works great!)
  • 1 medium tomato, chopped
  • A handful of fresh greens (like parsley, dill, or green onions), chopped
  • Salt to taste
  • Ground black pepper to taste
  • 1 tablespoon (15 ml) vegetable oil for cooking

Instructions

  1. Start by grating the cheese using a coarse grater. Set it aside.
  2. Prepare the lavash bread—homemade or store-bought, laying it flat on a clean surface.
  3. Chop the tomato and your choice of greens, such as parsley, dill, or green onions.
  4. Heat the vegetable oil in a frying pan over medium heat.
  5. Once the oil is hot, add the chopped tomatoes along with a pinch of salt and stir-fry for about 1-2 minutes until softened.
  6. Add the chopped greens and give it a quick stir to mix.
  7. Crack the eggs directly into the pan and sprinkle with the grated cheese.
  8. Season everything with a little salt and ground black pepper.
  9. Place the lavash bread on top of the egg mixture, pressing down gently with a spatula to ensure it all sticks together.
  10. Cook for 3-4 minutes on low heat, allowing the eggs to set and the bottom of the wrap to turn golden brown.
  11. To check if the egg is cooked, carefully rotate the lavash around the pan.
  12. If you prefer a more even crisp, you can either cover the pan with a lid for a couple of minutes or flip the wrap using a spatula.
  13. Return the wrap to the pan and cook for another minute or so until the lavash is crispy and the cheese is melted.
  14. Remove from the pan, slice in half if desired, and serve the crispy breakfast eggs wrap hot!

Recipe Notes

  • If you have leftovers, you can easily use them up in this wrap, making it a versatile choice.
  • For added flavor, consider sprinkling a pinch of your favorite spices, like paprika or Italian seasoning, over the egg mixture.
  • Keep the heat low while cooking to prevent burning the wrap before the eggs are fully set.
