Crispy Fried Eggs
Ingredients
- 2 large eggs (120 g)
- 1/4 teaspoon (1 g) salt
- 1/2 teaspoon (2 g) broth powder (optional, for flavor)
- 1 cup (125 g) all-purpose flour
- 1/2 teaspoon (2 g) salt
- 3/4 teaspoon (3 g) baking powder
- 1 teaspoon (4 g) broth powder (optional, for flavor)
- 1-2 tablespoons (15-30 ml) cooking oil, plus more if needed
- 4-6 tablespoons (60-90 ml) water (as needed for batter)
Instructions
- Prepare the Egg Mixture: In a medium bowl, whisk together the 2 large eggs, 1/4 teaspoon of salt, and 1/2 teaspoon of broth powder until fully combined and slightly frothy.
- Make the Coating Mix: In another bowl, combine 1 cup of all-purpose flour, 1/2 teaspoon of salt, 3/4 teaspoon of baking powder, and 1 teaspoon of broth powder. Mix well to distribute the dry ingredients evenly.
- Create the Batter: Add 1-2 tablespoons of cooking oil to the flour mixture. Gradually incorporate 4-6 tablespoons of water and stir until you achieve a smooth, somewhat thick batter that can coat the back of a spoon.
- Coat the Eggs: Dip each egg into the batter, ensuring it is fully coated. Follow by gently rolling the battered egg in the flour mixture, making sure to cover it evenly without compressing the coating.
- Fry the Eggs: Heat oil in a frying pan over medium-high heat (about 180-190°C or 355-375°F). Once hot, carefully drop the coated eggs into the oil. Fry for about 3-4 minutes or until golden brown, turning gently for even frying.
- Drain and Serve: Use a slotted spoon to remove the fried eggs from the oil and let them drain on paper towels. Serve hot for the best texture.
Recipe Notes
- Don’t rush the frying process; frying until the coating is golden ensures a satisfying crunch.
- For added flavor, you can experiment by adding paprika or garlic powder to the flour mix.
- If you want them extra crispy, coat them twice in the batter and flour mixture before frying.
