Ingredients
- 1 kilogram (2.2 pounds) potatoes
- 2 tablespoons (30 ml) olive oil
- 30 grams (2 tablespoons) unsalted butter
- 4 cloves garlic, minced
- 1/2 teaspoon chili flakes
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon dried coriander
- 3–4 sprigs fresh rosemary
- Salt, to taste
Instructions
- Preheat your oven to 200°C (400°F).
- Wash the potatoes thoroughly, scrubbing off any dirt, and cut them into wedges or your preferred shape.
- In a small pan, melt the butter over low-medium heat. Add the minced garlic, chili flakes, turmeric, dried coriander, and a pinch of salt. Cook for about one minute until fragrant but not browned. Remove from heat.
- Arrange the potato wedges in a single layer on a baking tray. Drizzle evenly with olive oil and sprinkle salt to taste.
- Pour the warm garlic butter mixture over the potatoes, using a spoon to ensure all wedges get coated evenly.
- Place fresh rosemary sprigs on top of the potatoes.
- Bake in the preheated oven for 40 to 45 minutes, turning the potatoes halfway through if desired, until the edges are golden and crispy, and the centers are tender.
- Serve immediately while hot for the best texture and flavor.
Recipe Notes
- To boost crispiness, pre-soak potato wedges in cold water for 30 minutes before cooking to remove excess starch.
- Use room temperature butter to melt evenly with garlic and spices, preventing burning.
- Spread potatoes in a single layer without crowding to ensure even roasting.
- If you prefer more aromatic flavor, add fresh rosemary leaves chopped instead of whole sprigs.
