- Salt and pepper, to taste
- 2 c mayo (about 480 ml)
- 1/3 c sugar (about 67 g)
- 3 Tbsp cider vinegar (about 45 ml)
- 1 c tomatoes, diced (about 150 g)
- 1 c bacon, fried and diced (about 150 g)
- 1 c turkey breast or chicken breast, cooked and cubed (about 150 g)
- 1 c hard-boiled eggs, peeled and diced (about 150 g)
- 1 c avocado, cubed (about 150 g)
- 1/2 c blue cheese, crumbles (about 75 g)
- 2 Tbsp scallions, diced for garnish (about 10 g)
Directions:
- In a large pot of water, cook potatoes until soft but not mushy. Drain and add to a large mixing bowl.
