Instructions

Prepare the Yogurt Sauce

  1. In a small bowl, combine Greek yogurt, mustard, tomato sauce, smoked paprika, and cumin. Mix well and set aside.

Prepare the Chicken

  1. Slice chicken breasts lengthwise to create thinner pieces. Place between plastic wrap and pound until evenly flattened to about ½ inch thickness.
  2. Season both sides with salt and black pepper, then coat thoroughly with the prepared yogurt sauce.
  3. Cover with plastic wrap and refrigerate for 20 minutes to marinate.

Make the Mushroom Filling

  1. Heat vegetable oil in a large pan over medium heat. Add chopped onion and fry until golden brown.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Add chopped mushrooms and cook until they release their moisture and become golden. Season with salt and herb mix.
  4. Transfer mushroom mixture to a bowl and let cool slightly. Add chopped cilantro and 70% of the grated cheese, reserving the rest for topping.

Assemble the Chicken Rolls

  1. Remove chicken from refrigerator. Place a portion of mushroom filling on each flattened breast.
  2. Carefully roll up the chicken, ensuring the filling stays inside. Secure with toothpicks if needed.
  3. Preheat oven to 350°F (180°C). Grease a baking dish with vegetable oil.
  4. Place chicken rolls in the prepared dish and bake for 30 minutes.
  5. Remove from oven, sprinkle remaining cheese on top of each roll, and bake for an additional 10 minutes until cheese is melted and golden.

Prepare the Herb Rice

  1. Cook rice according to package instructions until tender. Drain and set aside.
  2. In a large pan, heat oil and sauté leek until softened. Add diced carrot and cook for 3-4 minutes.
  3. Add chopped bell pepper and cook until vegetables are tender.
  4. Stir in cooked rice, teriyaki sauce, herb mix, and cumin. Simmer for 5 minutes, stirring occasionally.

Make the Fresh Salad

  1. In a large bowl, combine chopped tomatoes, cucumber, and red onion.
  2. Add arugula and sesame seeds.
  3. Drizzle with olive oil, season with oregano and salt. Toss gently to combine.
