  • 2 medium potatoes (300g / 10.6 oz), grated
  • 3 large eggs
  • 240ml / 1 cup whole milk
  • 4 tablespoons / 30g / 1 oz all-purpose flour
  • 30ml / 2 tablespoons olive oil, plus extra for frying
  • 3 medium tomatoes (300g / 10.6 oz), sliced
  • 100g / 1 cup / 3.5 oz hard cheese (cheddar or mozzarella), grated
  • 1 small bunch fresh dill (15g / 0.5 oz), chopped
  • Salt and black pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon dried garlic
  • ½ teaspoon dried rosemary
  • 1 teaspoon Italian herbs

For the Yogurt Cucumber Sauce:

  • 2 tablespoons / 30g plain yogurt or sour cream
  • 1 tablespoon / 15g mayonnaise
  • 1 medium cucumber (150g / 5.3 oz), grated
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

Instructions

Step 1: Prepare the Cabbage Shred the cabbage into thin strips. Place in a large bowl and cover with hot water. Let sit for 10 minutes to soften. Drain and squeeze out excess liquid using your hands or a clean kitchen towel. Set aside.

Step 2: Sauté the Vegetables Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the diced onion and red bell pepper. Sauté for 3-5 minutes until softened and fragrant. Remove from heat.

Step 3: Prepare the Potatoes Peel and grate the potatoes using a coarse grater. Place in a bowl of cold water for 10 minutes to remove excess starch. Drain and squeeze thoroughly to remove all moisture.
