Ingredients

For the Flatbread:

  • 1 cup (200 g) cottage cheese
  • 2 large eggs
  • Pinch of salt (optional)

For the Filling:

  • 2 cups (about 60 g) lettuce, chopped
  • 3.5 oz (100 g) bacon, cooked and crumbled
  • 1 tablespoon (15 ml) lemon juice
  • 1 teaspoon (5 g) mustard
  • 1/3 cup (80 g) Greek yogurt
  • A few dashes of Worcestershire sauce (to taste)
  • 2 tablespoons (15 g) grated Parmesan cheese
  • Black pepper, to taste
  • Salt, to taste

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a blender or food processor, combine the cottage cheese and eggs. Blend until smooth. If desired, add a pinch of salt for flavor.
  3. Spread the mixture evenly onto a baking tray lined with parchment paper.
  4. Bake for about 30 minutes, or until the edges are slightly golden and the center is set.
  5. While the flatbread bakes, prepare the Caesar dressing. In a bowl, whisk together the lemon juice, mustard, Greek yogurt, Worcestershire sauce, Parmesan, black pepper, and salt to taste until smooth.
  6. In a separate bowl, combine the chopped lettuce with the crumbled bacon and mix in the Caesar dressing until the lettuce is well coated.
  7. Once the flatbread is done baking, remove it from the oven and let it cool slightly. Cut it into your desired sizes.
  8. Spoon the Caesar filling over each piece of flatbread.
  9. Fold the flatbread over to create wraps or serve open-faced.
  10. Enjoy your delicious flatbread filled with a hearty Caesar twist!

Recipe Notes

  • For a crispy flatbread, make sure to spread the mixture thinly on the tray.
  • Be careful not to over-bake the flatbread; it should be set but still moist.
  • Using freshly cooked bacon gives the best flavor, but pre-cooked bacon can save time.
