Banana-Berry Baked Oatmeal Cake

This nourishing breakfast cake transforms simple oatmeal into an elegant, make-ahead meal. Dating back to Pennsylvania Dutch cuisine, baked oatmeal has evolved into countless modern variations, with this fruit-studded version offering both nutrition and convenience.

Ingredients

Base

  • 200g (2 cups) old-fashioned oats
  • 2 medium ripe bananas (240g), mashed
  • 2 large eggs
  • 240ml (1 cup) almond milk
  • 85g (¼ cup) honey
  • 100g (1 cup) mixed berries
  • 60g (½ cup) chopped almonds
  • 5g (1 tsp) ground cinnamon
  • 5ml (1 tsp) vanilla extract
  • 5g (1 tsp) baking powder
  • 1.25g (¼ tsp) salt

Instructions

Preparation

  1. Preheat oven to 175°C (350°F).
  2. Grease a 23cm (9-inch) springform pan and line with parchment paper.
  3. Mash bananas until completely smooth.
  4. Whisk together eggs, almond milk, honey, and vanilla extract.

Mixing and Assembly

  1. Combine oats, cinnamon, baking powder, and salt in a large bowl.
  2. Add wet ingredients to dry ingredients, stirring until well combined.
  3. Gently fold in berries and chopped almonds, reserving some for topping.
  4. Pour batter into prepared pan, smoothing the top.
  5. Sprinkle remaining berries and almonds over surface.

Baking and Serving

  1. Bake for 35-40 minutes until golden and set in center.
  2. Test doneness with a toothpick – it should come out clean.
  3. Cool in pan for 10 minutes.
  4. Remove springform ring and cool completely.
  5. Cut into 8 wedges for serving.

  • Frozen: Up to 3 months (wrap individual slices)
