Ingredients

  • Black pepper (to taste)
  • Vegetable oil (for cooking)

Preparation

1. Prepare the Potatoes

Start by washing 1 kg of potatoes thoroughly. Using a fancy knife or a regular one if preferred, slice the potatoes evenly. The even slices ensure that the potatoes cook uniformly.

Place the sliced potatoes in a large bowl and cover them with cold water. Let the potatoes soak for 15 minutes. This step helps remove excess starch, making the potatoes crispier when fried. While the potatoes are soaking, you can prepare the egg mixture.

2. Prepare the Egg Mixture

In a large mixing bowl, crack 5 eggs and beat them well until they are fully combined. Add chopped green onions according to your taste preference, which will add a fresh and slightly sharp flavor to the dish. Then, add 1/2 teaspoon of dried garlic, 1/2 teaspoon of paprika, a pinch of salt, and black pepper. Mix all the ingredients thoroughly until the seasoning is evenly distributed throughout the egg mixture.

3. Fry the Potatoes

After the potatoes have soaked, drain the water and place the slices on a clean towel. Pat them dry to remove any excess moisture, as this will help them fry better and avoid splattering when they hit the hot oil.

Heat a frying pan over medium heat and add a little vegetable oil. Once the oil is hot, place the sliced potatoes in the pan in a single layer. Fry the potatoes until they are golden brown on both sides, turning them occasionally to ensure even cooking. This should take about 8-10 minutes. Once the potatoes are fried, season them with salt and pepper to taste.

4. Assemble the Dish

Preheat your oven to 180°C (350°F).

Transfer the fried potatoes to a deep bowl and pour the prepared egg mixture over them. Mix gently to ensure that all the potatoes are well-coated with the egg mixture. This step will infuse the potatoes with the flavors of the eggs and seasonings.

Once mixed, transfer the entire contents of the bowl to a baking dish, spreading the mixture out evenly. Sprinkle 80 g of grated mozzarella over the top. The mozzarella will melt and create a delicious, golden crust as the dish bakes.

Place the baking dish in the preheated oven and bake for 20 minutes or until the top is golden brown and the cheese has melted completely. The eggs should be fully cooked, and the potatoes should be tender yet slightly crisp on the edges.
