Ingredients:
- 2 medium zucchini (coarsely grated) (about 400g)
- 3 scallions (chopped) (about 100g)
- 1/3 cup fresh mint (chopped) (about 10g)
- 1/3 cup olive oil (80ml)
- 4 oz Greek yogurt (about 115g)
- 2 eggs, lightly beaten
- 7 oz feta cheese, crumbled (about 200g)
- 1/2 lemon, zested
- 1 tsp baking powder
- Salt and pepper (to taste)
- 3/4 cup almond flour (or all-purpose flour, oat flour, or gluten-free flour) (about 75g)
Directions:
- Preheat your oven to 350°F (175°C). Lightly brush a 9×13” (23×33 cm) pan with olive oil or line it with parchment paper.
- Squeeze all of the liquid from your zucchini shreds using a clean, thin cotton hand towel.
- In a large bowl, mix all of the ingredients except the flour.
- Next, add the flour a little at a time, mixing it in as you go.
- Transfer the mixture to the pan and spread it out evenly. Bake for 50-55 minutes. If the top isn’t golden brown, turn on the broiler for a few minutes. Remove from the oven and allow to cool in the pan for 10 minutes before slicing.
