Ingredients:

- 125 g ground lamb (4.4 oz)
- 250 g eggplant (8.8 oz)
- 400 g mozzarella cheese (14.1 oz)
- 50 g Parmigiano Reggiano cheese (1.8 oz)
- 50 g pecorino cheese (1.8 oz)
- 250 g tomatoes (8.8 oz)
- 250 g potatoes (8.8 oz)
- 1 clove garlic
- 1 teaspoon cinnamon
- 1 cup red wine (240 ml)
- 1 cup olive oil (240 ml)
- 1 liter béchamel sauce (4.2 cups)
- Seed oil for frying
- Salt
- Black pepper
Directions:
Preheat oven to 180°C (350°F). Clean the eggplants and cut them into thin slices lengthwise. Sprinkle with salt and let them drain in a dish for 2 hours. Meanwhile, in a pan, sauté finely chopped onions and crushed garlic with a little olive oil until the onions are golden brown. Add the pork and lamb, cooking over medium heat, stirring regularly until browned. Increase the heat and add red wine, salt, pepper, and cinnamon. Add peeled tomatoes and simmer over low heat for 1 hour, stirring occasionally.
Prepare the potatoes by washing, peeling, and cutting them into thin slices, then boil in salted water for 5 minutes and drain well. In a heavy-bottomed pan, heat plenty of seed oil for frying, and fry the eggplant and potato slices until golden brown. Remove and drain on absorbent paper.
Assemble the gratin by arranging a layer of potatoes, followed by half of the eggplant slices, half of the meat preparation, and sprinkling generously with grated Parmigiano Reggiano and pecorino cheese, then add half of the mozzarella slices. Repeat these layers with the remaining ingredients, finishing with a layer of béchamel. Bake in the preheated oven for about 45 minutes until golden brown. Remove from the oven and serve hot, optionally garnished with chopped parsley.
