Mojito Ice Cream

Mojito Ice Cream combines the refreshing flavors of a classic mojito cocktail with the creamy goodness of ice cream. This delightful dessert is perfect for hot summer days or any time you want to indulge in a sweet treat. The combination of mint, lime, and a touch of rum creates a unique and refreshing ice cream experience that everyone will love.

Ingredients:

  • 15 g mint (about 0.5 oz)
  • 4 limes (zest and juice)
  • 60 ml white rum (about 2 oz)
  • 400 g sweetened condensed milk (about 14 oz)
  • 500 ml cream (about 2 cups)

Directions:

First, pluck the mint leaves and chop finely. Zest and juice the limes. Place the whipping cream in a large mixing bowl and beat with a hand mixer until stiff peaks form. In a separate large bowl, mix together the sweetened condensed milk, chopped mint, rum, lime zest, and lime juice. Add the whipped cream to the bowl with the condensed milk mixture and carefully fold in with a rubber spatula until there are no more streaks. Pour the ice cream mixture into a freezer-safe container. Place the ice cream in the freezer for at least 4 hours, but preferably overnight. Take the ice cream out of the freezer approximately 10–20 minutes before serving so that it is soft enough to portion.
