Ingredients:

  • 150 g strawberries (about 1 cup)
  • 80 ml golden syrup (1/3 cup)
  • 20 ml balsamic vinegar (4 tsp)
  • 120 ml water (1/2 cup)
  • 2 eggs
  • 750 g mascarpone cheese (26 oz)
  • 120 ml heavy cream (1/2 cup)
  • 40 ml honey (3 tbsp)
  • 1 tsp vanilla extract
  • 24 ladyfingers
  • 80 g strawberry jam (1/3 cup)
  • Mint (optional, for garnish)

Directions:

  1. Combine golden syrup, balsamic vinegar, and water in a small pot. Warm over medium heat and stir until well combined. Let the mixture cool.
  2. Meanwhile, wash the strawberries, remove stems, and slice them thinly.
  3. Separate the eggs. Beat egg yolks with honey and vanilla extract in a bowl until creamy using a hand mixer.
  4. Gradually add mascarpone and mix until smooth.
  5. In a separate bowl, whip heavy cream until stiff and gently fold it into the mascarpone mixture.
  6. Briefly dip ladyfingers one by one into the cooled syrup and cover the bottom of a glass dish with them.
  7. Spread half of the mascarpone cream over the ladyfingers and smooth it out.
  8. Spread half of the strawberry jam over the cream.
  9. Add another layer of syrup-dipped ladyfingers, spread with the remaining jam, and top with the remaining mascarpone cream.
