Instructions

Step 1: Prepare the potato baskets

  1. Preheat the oven to 180°C / 356°F.
  2. Peel the potatoes and slice them very thinly.
  3. Grease a muffin tin with vegetable oil.
  4. Line each cup with overlapping potato slices to form basket shapes.
  5. Season lightly with salt and pepper, then sprinkle with grated Parmesan.
  6. Bake for 10 minutes until the potatoes start to soften and hold their shape.

Step 2: Prepare the vegetable filling

  1. Finely chop the onion and bell pepper.
