Ingredients

  • 1.5 cups almond flour – 150 g
  • 1.5 tbsp date caramel – 22 g
  • 4 tbsp peanut butter – 60 g
  • 1/2 cup roasted peanuts – 75 g
  • 1.5 cups dark chocolate chips – 225 g
  • 2-3 tsp coconut oil – 10-15 ml

Directions

  1. To start, remove the pit from the dates and soak them in hot water for 10 minutes, ensuring the water is not quite boiling but almost there. The goal is to have super soft dates that can easily be blended.
  2. While the dates are soaking, prepare a loaf pan by lining it with parchment paper.
  3. After 10 minutes, drain the water from the dates and add the soaked dates to your food processor along with the peanut butter and vanilla extract. Blend for about 3-5 minutes, stopping to scrape down the sides a few times. You will notice a paste-like, caramel texture start to form.
  4. Remove the date caramel from the food processor and set it aside.
  5. Next, add in the almond flour, 1.5 tbsp of the date caramel, and additional peanut butter to the processor. Blend again for a few minutes until a crumbly, crust-like dough forms. It should hold its shape when pressed. If it doesn’t, keep blending.
  6. Add the crust to the prepared loaf pan, then use a spatula to press it down firmly until it molds to the pan with no gaps at the edges.
  7. Pour the remaining date caramel over the crust and spread it evenly.
  8. Top with roasted peanuts, pressing them slightly into the date caramel so that they cover it well with minimal gaps.
  9. Place the loaf pan in the freezer and allow it to harden for about 60-90 minutes, or leave it overnight for best results.
  10. After hardening, melt the chocolate in the microwave or over a double boiler with a small amount of coconut oil until creamy and smooth. If using the microwave, melt in 30-second increments, stirring in between until almost melted.
  11. Remove the loaf pan from the freezer and pull out the snickers block using the parchment paper. Place it on a cutting board and cut it into equal-sized bars.
  12. Working quickly, dip and coat each snickers bar in the melted chocolate, then place it back on the prepared cutting board lined with parchment paper to avoid sticking.
