Ingredients

  • 12 capia peppers (or sweet red peppers)
  • 200g (7 oz) sheep cheese, crumbled
  • 200g (7 oz) goat cheese, crumbled
  • 5 sprigs fresh parsley, finely chopped
  • 100g (3.5 oz / 1 cup) walnuts, finely chopped
  • 1/2 tablespoon (7g) black cumin seeds
  • 1 tablespoon (15g) sesame seeds
  • 4 cloves garlic, minced
  • 3 tablespoons (45ml) pomegranate molasses
  • Juice of 1/2 lemon
  • Extra virgin olive oil (enough to fill jar)

Instructions

  1. Roast the peppers: Preheat oven to 250°C (480°F) for 5 minutes. Place capia peppers on a baking tray and roast for 15 minutes until skin is charred and blistered.
  2. Steam the peppers: While peppers are hot, cover them with a kitchen towel and let stand for 10 minutes. This steaming process makes peeling easier.
  3. Prepare the filling: In a large bowl, combine crumbled sheep cheese, goat cheese, chopped parsley, chopped walnuts, black cumin seeds, and sesame seeds. Mix well with your hands to create a uniform filling.
  4. Peel and stuff peppers: Carefully peel the skin from the steamed peppers. Make a small slit and remove seeds. Stuff each pepper generously with the cheese and walnut mixture, rolling by hand for easier wrapping.
  5. Prepare marinade: In a small bowl, crush the 4 garlic cloves and mix with pomegranate molasses and lemon juice.
