Chicken Breast Baked with Eggplant and Tomatoes

Ingredients:

  • 500 g chicken breast fillet
  • 2-3 eggplants
  • 2-3 tomatoes
  • 150-200 g cheese
  • 1 clove garlic
  • Sour cream or mayonnaise
  • Parsley greens
  • Vegetable oil for frying
  • Salt
  • Freshly ground pepper

Directions:

  1. Prepare the ingredients: Wash the eggplants, cut off the ends, wash them again, and dry. Cut the eggplants lengthwise into thin strips and place them in a bowl. Salt the eggplants and let them sit for 20-30 minutes to drain.
  2. Heat vegetable oil in a frying pan and fry the eggplant strips for 2-3 minutes on each side. Once done, transfer them to a paper napkin to remove excess oil.
  3. Grease a baking dish with oil and lay down a layer of the fried eggplants.
  4. Wash the chicken breasts, dry them, and cut them into 2-3 pieces. Place the pieces in a bag or cling film and lightly pound them to about 7 mm thickness. Season with salt and pepper, then place them on top of the eggplants in the baking dish.
  5. Add another layer of eggplant on top of the chicken.
  6. Wash, dry, and slice the tomatoes into rings. Peel and finely chop the garlic. Chop the parsley greens. Grate the cheese.
  7. Lay the tomato slices on the eggplant, season with salt and pepper, and sprinkle the garlic and parsley on top.
  8. Spread a layer of sour cream or mayonnaise over the tomatoes and sprinkle with cheese.
  9. Preheat the oven to 180°C (350°F) and bake for 20-25 minutes.
  10. Let it sit for 10 minutes before serving, garnished with chopped herbs.
